Ingredients
- 2 tablespoons of vegetable oil
- 1 small onion, diced
- 1/2 green pepper, diced
- 3 cloves of garlic, minced
- 1/2 teaspoon of ground cumin
- 1/4 teaspoon of ground oregano
- 1/4 teaspoon of salt
- 1 cup of long-grain white rice
- 2 cups of water
- 1 can (15 ounces) of red beans, drained and rinsed
Instructions
Step 1
In a large saucepan, heat the oil over medium heat. Add the onion, green pepper, garlic, cumin, oregano, and salt. Cook, stirring occasionally, for about 5 minutes or until the vegetables are softened.Step 2
Add the rice and stir to combine. Cook for 1 minute.Step 3
Add the water and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.Step 4
Stir in the beans and cook for an additional 5 minutes.Step 5
