Ingredients

  • 2 tablespoons of vegetable oil
  • 1 small onion, diced
  • 1/2 green pepper, diced
  • 3 cloves of garlic, minced
  • 1/2 teaspoon of ground cumin
  • 1/4 teaspoon of ground oregano
  • 1/4 teaspoon of salt
  • 1 cup of long-grain white rice
  • 2 cups of water
  • 1 can (15 ounces) of red beans, drained and rinsed

Instructions

Step 1

In a large saucepan, heat the oil over medium heat. Add the onion, green pepper, garlic, cumin, oregano, and salt. Cook, stirring occasionally, for about 5 minutes or until the vegetables are softened.

Step 2

Add the rice and stir to combine. Cook for 1 minute.

Step 3

Add the water and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.

Step 4

Stir in the beans and cook for an additional 5 minutes.

Step 5

Remove from the heat and let stand, covered, for 10 minutes before serving. Enjoy!
